Reminiscing about my recent trip to Mexico and the hot temperatures we’re experiencing in New York have made me crave a refreshing treat. Horchata Pops to the rescue!
Horchata is a traditional beverage popular in Spain and Latin America. Typically in Mexico, horchata is made from soaking rice in water, blending the mixture with sugar and cinnamon and serving over ice.
Easy Horchata Pops
16 oz vanilla rice milk
1-8 oz container lowfat vanilla yogurt
1/2 tsp. cinnamon
blend or stir all ingredients together, pour into popsicle molds, freeze and enjoy!
